Kurakkan Welithalapa with Harischandra Flour

What You Need

  • 400g of Harischandra Kurakkan Flour
  • 200g of Harischandra Rice flour
  • 1 Coconut
  • 800g of Sugar
  • ½ teaspoon of Salt

Method

Step 1: Mix Harischandra Kurakkan flour, Harischandra Rice flour and salt in the bowl.

Step 2: Make one teacup of coconut milk. Mix the rest of the scraped coconut with the mixed flour and add coconut milk drip by drip to make the welithalapa mixture. Steam the mixture till its cooked and put it a side.

Step 3: To make the sweet mixture, boil sugar in a pan until it bubbles. Leave about ½ cup a side. Add 1/3 bottle of water to the sweet mixture on the boil till the paste thickens, add the steamed flour mixture and steam for a further few minutes and take off the cooker.

Step 4: Apply little bit of the sweet mixture on to a cutting board or a large plate, put the steamed mixture on to it.

Step 5: Even out the mixture with a banana leaf and apply the rest of the sweet mixture, by spreading it across. Cut into small pieces. Enjoy!
