Stir-Fry Harischandra Noodles

A household staple, Harischandra noodles is the only other dish that could hold a flame to Sri Lanka’s love affair with rice.
What You Need
- Harischandra 400g noodles
- Carrots, cabbage, leeks or spring onion washed and sliced
- Onion, garlic, green chili, ginger chopped and sliced
Method
Step 1: Mix two tea spoons (10g) of salt in 2.5 litres of water & bring to boil.
Step 2: Add the noodles and simmer for few minutes.
Step 3: Wash in cold water & strain the contents.
Step 4: Fry onion, ginger, and garlic till fragrant. When softened add the carrots, leeks/spring onions and cabbage.
Step 5: Add the cooked noodles by gently stirring it in.
Step 6: Noodles are ready!
